McDougall's Waldorf Salad
5 unpeeled apples, chopped
2 celery stalks, diced
½ cup chopped walnuts, toasted
½ cup raisins
1 teaspoon lemon juice
1 ½ cup seedless grapes, halved
Dressing:
1½ cup pineapple juice
2 Tablespoons cornstarch
Combine pineapple juice and cornstarch in a saucepan and mix well to dissolve. Bring the mixture to a boil over med high heat and continue to boil for 1 min or until thickened and clear, stirring occasionally. Chill for 2 hours. Combine salad ingredients. Pour the chilled dressing over salad, toss and refrigerate.
