Oatmeal Chocolate Chip Cookies--her favorites!!

1 cup margarine, softened but not melted

1 cup brown sugar

1 cup granulated sugar

2 teaspoons vanilla

2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

2 eggs, beaten

1 cup chocolate chips

2 cups oatmeal

1 cup chopped nuts

Beat margarine, sugars and vanilla together until light and creamy.

Mix together flour, baking soda, baking powder and salt. 

Mix together chocolate chips, oatmeal and nuts.  Sprinkle ¼ of flour mixture over oatmeal mixture.

Beat the flour mixture into the margarine mixture in two parts, alternating with eggs.

Stir in oatmeal mixture.

Drop by teaspoonfuls onto parchment lined cookie sheet.

Bake 350 degrees for 10 mins.

6 frozen bananas
1-20 oz can crushed pineapple w/ juice
1/4 small bag frozen strawberries

Variation:
½ small bag frozen raspberries or blueberries

Times are Changing

…a day for Storypeople….

She held her grief behind her eyes like an ocean and when she leaned forward into the day it spilled onto the floor and she wiped at it quickly with her foot and pretended no one had seen.

The days go by with so many little things that don't seem to matter until they're no longer there and suddenly they're are all that really mattered.

No hurt survives for long without our help, she said.  And then she kissed me and sent me out to play again for the rest of my life.

Her whole life changed the day she started to tell the truth about what made her happy. I never knew it could be that simple she said.

Quick Tapioca Pudding

Combine and stir in a double boiler:
3 Tablespoons quick tapioca
1/3 cup sugar
1/3 teaspoon salt
2 cups almond or coconut milk
Cook these ingredients without stirring over rapidly boiling water for 7 mins.  Stir and cook 5 mins longer.  Remove from the steam.  The tapioca thickens as it cools.

Fold in:
½ teaspoon vanilla or 1 teaspoon grated orange or lemon rind
¼ cup or more coconut or toasted almonds; ½ cup or more chopped dates; ½ crushed banana and ½ diced banana
