Mamaw

At her request…

Miss Me - But Let Me Go
When I come to the end of the road
and the sun has set for me,
I want no rites in a gloom filled room
Why cry for a soul set free?
Miss me a little - but not too long
and not with your head bowed low,
Remember the love that we once shared
Miss me - But let me go.
For this journey that we all must take
and each must go alone,
It's all a part of the Master's plan
a step on the road to home.
When you are lonely and sick of heart
go to the friends we know,
and bury your sorrows in doing good deeds.

McDougall's Costa Rican Ceviche
Make this several hours before serving for best results.

Servings:  4-6

2  14.5 ounce cans water-packed hearts of palm, drained
¾ cup fresh lime juice (8-10 limes)
1 small onion, diced
2 green onions, chopped
1 clove garlic, crushed
¼ cup diced celery
1 small jalapeno, seeded and minced
¼ cup chopped fresh cilantro

Slice the hearts of palm into bite-sized pieces and place in a bowl.  Strain the lime juice and pour over the hearts of palm.  Add the remaining ingredients and mix well.  Refrigerate at least 2 hours for flavors to blend.  Season with a bit of sea salt and freshly ground pepper, if desired.
