McDougall’s Creamy Cauliflower Spread or dip

1 head cauliflower
2 tablespoons Dijon mustard
1 ½ teaspoon lime juice
¼ t sea salt

Cut the cauliflower into florets and steam until tender, about 15 minutes. Place in a food processor, add the remaining ingredients and process until smooth. Cover and refrigerate until using.

Hints: This will keep in the refrigerator for a least a week and it tastes even better the day after it is made.

Makes about 4 cups or enough for 8

McDougall's Costa Rican Ceviche
Make this several hours before serving for best results.

Servings:  4-6

2  14.5 ounce cans water-packed hearts of palm, drained
¾ cup fresh lime juice (8-10 limes)
1 small onion, diced
2 green onions, chopped
1 clove garlic, crushed
¼ cup diced celery
1 small jalapeno, seeded and minced
¼ cup chopped fresh cilantro

Slice the hearts of palm into bite-sized pieces and place in a bowl.  Strain the lime juice and pour over the hearts of palm.  Add the remaining ingredients and mix well.  Refrigerate at least 2 hours for flavors to blend.  Season with a bit of sea salt and freshly ground pepper, if desired.

Bernadette's Cheese Pierogies

¼ cup fresh lemon juice
¼ cup Shoyu
¼ red bell pepper
2-3 cloves garlic, peeled
1- 1½ cups raw cashews, macadamia nuts, pine nuts or a combination
Raw, washed, dried white button mushrooms, stems removed

In a high-speed blender, combine all of the filling ingredients (not mushrooms) and blend until creamy.

Using a spoon, place a small dollop of the nut mixture inside each mushroom cap.

Refrigerate.  Serve slightly chilled.

Connector

Connectors, are the people in a community who know large numbers of people and who are in the habit of making introductions. A connector is essentially the social equivalent of a computer network hub. They usually know people across an array of social, cultural, professional, and economic circles, and make a habit of introducing people who work or live in different circles. They are people who "link us up with the world ... people with a special gift for bringing the world together." They are "a handful of people with a truly extraordinary knack [... for] making friends and acquaintances".

Black Bean Dip (adapted from Leslie Kitt’s recipe, McDougall Newsletter)

1  15 ounce can black beans, drained and rinsed
1 tablespoon chopped cilantro
1 garlic clove, minced
2 teaspoons lemon juice
2 teaspoons balsamic vinegar
½ teaspoon cumin
½ teaspoon chili powder
¼ teaspoon black pepper
1/8 teaspoon salt
coconut milk


Combine all ingredients except coconut milk in a blender and blend, adding coconut milk, as needed, to thin to desired consistency.

Serve with assorted fresh vegetables or baked corn/flour tortilla chips.

Makes 1 ½ cups
